Refrigerate prepared crust for 40 mins, then in freezer 20 mins.
Prebake pie crust at 375 deg F, leave the oven on. (25mins + 5mins)
Saute the white parts of 2 medium leeks washed thoroughly and cut into 1/2 inch dice (about 2 cups), in 2 Tbs. butter, about 5-7 minutes.
Whisk together all ingredients except cheese and leeks.
Put leeks in bottom of pie crust crumble in goat cheese.
Pour the custard mixture into the pie shell, warm the pie shell if cooled down (1/2 inch below rim). Bake until light golden brown and a knife inserted about 1 inch from the edge comes out clean and the center feels set but soft like gelatin 32-35 minutes. Serve warm or at room temperature.
